Ingredients Needed:

  • 500g (1.1 lbs) Brussels sprouts
  • 50g (1.8 oz) Parmesan cheese, plus extra for serving
  • 250g (8.8 oz) Greek yoghurt
  • ½ lemon
  • 2 thick slices of sourdough bread

How To Make Charred Brussels:

  1. Char the Brussels Sprouts: Trim and halve the Brussels sprouts. Char them in a large non-stick frying pan over medium heat for about 15 minutes, until they become golden on the outside and tender on the inside. Set them aside on a board.
  2. Prepare the Yogurt Sauce: Finely grate most of the Parmesan and mix it into the Greek yoghurt along with the juice of half a lemon. Season the sauce with salt and black pepper. Spoon the yogurt mixture onto a serving platter.
  3. Toast the Bread Cubes: Place the pan back on medium-high heat. Slice the sourdough bread into 1cm cubes and toast with a drizzle of olive oil for about 4 minutes, until golden. Finely grate the remaining Parmesan over the croutons in the last few seconds of toasting. Toss the croutons occasionally to evenly coat them.
  4. Assemble and Serve: Arrange the croutons and charred Brussels sprouts on top of the yogurt mixture. Finish the dish with extra shavings of Parmesan and a drizzle of extra virgin olive oil. Toss everything together just before serving.
