Ingredients Needed:

  • 4 tablespoons runny honey
  • 2 tablespoons dukkah
  • 250g (1 tub) cottage cheese
  • 4 ripe figs
  • 50g Pata Negra or quality Spanish ham

How To Make Fig Salad:

  1. Make the Honey Caramel: Drizzle the honey into a pan over medium heat and let it bubble for about 3 minutes until it becomes a dark golden caramel. Avoid stirring or touching it; just swirl the pan occasionally.
  2. Prepare the Dukkah Praline: Lightly oil a piece of greaseproof paper, sprinkle the dukkah over a 15cm x 15cm area and pour the caramel over the top. Let it settle and cool. Once cooled, break it up and crush it in a pestle and mortar until fine.
  3. Assemble the Salad: Divide the cottage cheese between two plates, quarter and scatter the figs over, and arrange the Pata Negra around the plate. Sprinkle a few pinches of the dukkah praline over the salad and drizzle with extra virgin olive oil to finish.
