This Sizzling Squid Recipe Is From 5 Ingredients Mediterranean Cookbook by Jamie Oliver.

Ingredients Needed:

  • 2 large super-ripe tomatoes (300g total), finely grated
  • 300g whole squid, cleaned and gutted
  • 70g chorizo or spicy sausage, sliced or crumbled
  • ½ bunch of fresh mint (15g), leaves picked
  • 1 lemon, cut into wedges

How To Make Sizzling Squid:

  1. Prepare the squid and tomatoes: Finely grate the tomatoes on a box grater, discarding the skin. Slice the squid open like a book, lightly score the inside in a criss-cross pattern, and set aside the tentacles. Season with salt and pepper.
  2. Cook the squid and sausage: Preheat a large non-stick frying pan over high heat for 3 minutes. Drizzle in 1 tablespoon of olive oil, then place the squid scored side down in the pan. Press down with a spatula for 1 minute, then add the tentacles and chorizo. Toss in half the mint leaves and cook for 3 minutes, stirring regularly.
  3. Make the sauce: Remove the squid from the pan and set aside. Add the grated tomatoes and a squeeze of lemon juice to the pan. Cook for 2 minutes, or until thickened.
  4. Assemble and serve: Slice the squid into ½ cm strips and place it on top of the tomato sauce. Scatter over the remaining mint leaves and serve with lemon wedges for squeezing over.

Recipe Tips

  • Use ripe tomatoes: The riper the tomatoes, the richer and sweeter the sauce will be, which makes a big difference in flavour.
  • Score the squid correctly: Lightly scoring the squid helps it cook quickly and evenly, and also makes it tender and easier to eat.
  • Cook squid on high heat: Cooking squid on very high heat for a short time keeps it tender. Overcooking will make it chewy.
  • Serve immediately: This dish tastes best when served hot and fresh, so try to serve as soon as it’s ready.

How To Store & Reheat Leftovers

Storing: Place any leftover squid and sauce in an airtight container. Store in the fridge for up to 2 days.

Reheating: Reheat in a hot pan for about 2-3 minutes, just until warmed through. Be careful not to overheat, as squid can become rubbery if cooked for too long.
