This Epic Prawns & Beans Recipe Is From 5 Ingredients Mediterranean Cookbook by Jamie Oliver.
Ingredients Needed:
- 175g sourdough bread, cut into 2.5cm cubes
- 300g large raw peeled king prawns, deveined
- 6 cloves of garlic, peeled and finely sliced
- ½ x 700g jar or 1 x 400g tin of cannellini beans
- 1 tablespoon harissa or rose harissa
How To Make This Epic Prawns & Beans:
- Toast the sourdough cubes: Place the bread cubes in a large non-stick frying pan over high heat. Toast them until golden, turning regularly to prevent burning.
- Prepare the prawns: While the bread is toasting, toss the prawns with 1 tablespoon of olive oil, a pinch of sea salt, black pepper, and the sliced garlic.
- Heat the beans: Pour the cannellini beans (with their juices) into a saucepan. Add the harissa and simmer gently for about 5 minutes, stirring occasionally until the mixture thickens.
- Cook the prawns: Once the bread is golden, add the prawns and garlic mixture to the frying pan. Add a splash of red wine vinegar and cook for about 2 minutes, or until the prawns are just cooked through, tossing regularly.
- Serve: Taste the beans and adjust seasoning if needed. Divide the beans between plates, top with the prawns and crispy croutons, and serve immediately.
Recipe Tips
- Cut the bread evenly: Make sure to cut the sourdough bread into even cubes, so they toast evenly and become nice and crispy.
- Do not overcook the prawns: Prawns cook quickly, so be careful not to overcook them. They only need about 2 minutes in the pan.
- Use fresh garlic: Freshly sliced garlic adds a lot of flavor to the prawns. Don’t let it burn while cooking or it will taste bitter.
- Let the beans thicken: Simmer the beans with the harissa until they thicken slightly, so the dish has a rich and hearty texture.
How To Store & Reheat Leftovers
Storing: Place any leftover prawns and beans in an airtight container and store in the refrigerator for up to 2 days.
Reheating: Reheat the prawns and beans in a pan over medium heat for 3-4 minutes. Be careful not to overheat the prawns, as they can become tough.
