  • 150ml (5 oz) white wine

How To Make Croatian Mussels:

  1. Make the breadcrumbs: Whiz the garlic bread into fine crumbs and toast them in a large casserole pan over medium heat, stirring regularly until golden.
  2. Prepare the mussels: While the breadcrumbs toast, check the mussels. If any are open, tap them—discard any that don’t close.
  3. Cook the mussels: Remove most of the toasted breadcrumbs to a plate. Turn the heat to high, add the mussels, chopped parsley, tomatoes, wine, and 1 tablespoon of olive oil. Stir well and cook for 2 minutes.
  4. Steam the mussels: Add 50ml (1.7 oz) of water to the pan, cover with a lid, and steam for 3 minutes until all mussels open. Discard any that remain closed.
  5. Serve: Plate the mussels, drizzle with extra virgin olive oil, and scatter the remaining crispy breadcrumbs over the top for a crunchy finish. Enjoy!
