Ingredients Needed:

  • 2 limes
  • 10 mixed-colour seedless grapes, finely sliced
  • ½ fresh green chilli, finely sliced
  • 2 x 150g super-fresh bream fillets, skin off, pin-boned
  • 20g rocket (arugula)

How To Make Elegant Fish Carpaccio:

  1. Prepare the lime juice: Squeeze the juice from the limes into a bowl. Season with a couple of good pinches of sea salt.
  2. Toss the grapes and chilli: Finely slice the grapes and chilli. Add them to the bowl with the lime juice and toss to combine.
  3. Slice and flatten the fish: Slice the bream fillets at an angle into 1cm pieces. Place them between two sheets of greaseproof paper and gently flatten them with a rolling pin until they are roughly 2mm thick. Work in batches as needed.
  4. Arrange the fish on plates: Peel the fish from the paper and arrange it neatly on two serving plates or a large platter.
  5. Add the topping and serve: Spoon over the grape and chilli mixture, drizzling with the seasoned lime juice. Scatter the rocket on top and finish with a drizzle of 1 tablespoon extra virgin olive oil.
