- 1 aubergine (250g), trimmed and halved lengthways
- 4 x 150g (5 oz) chicken thighs, skin on, bone in
- 50g (1.75 oz) luxury fruit and nut mix, finely chopped
- 1 heaped tablespoon shawarma paste
- 150g (¾ cup) basmati rice
How To Make Chicken Traybake:
- Roast the chicken and aubergine: Preheat the oven to 200°C (400°F). Score the skin of the aubergine at 1 cm intervals and cut each half again. Place in a 20cm x 25cm baking dish with the chicken thighs. Toss with 1 tablespoon each of olive oil and red wine vinegar, plus a pinch of sea salt and black pepper. Roast for 25 minutes.
- Prepare the rice mixture: Boil the kettle. Remove the dish from the oven and stir in the shawarma paste, half the chopped fruit and nuts, and the rice.
- Cook the rice: Stir in 300ml of boiling water, then return the dish to the oven for another 25 minutes, or until the rice is cooked and the chicken is tender, easily pulling away from the bone.
- Serve: Fluff up the rice with a fork, sprinkle the remaining fruit and nuts over the top, and serve immediately.
