  2. Grate and soak the strawberries: Finely grate 3 strawberries into a bowl, mix with 1 teaspoon of extra virgin olive oil, and spread the mixture over one side of each panettone round. Let it soak in.
  3. Blend the ricotta: In a food processor, blend the ricotta with the honey until smooth. Divide the mixture between the panettone rounds, then swirl lemon curd on each round (stir the lemon curd first to loosen it).
  4. Add the strawberries: Hull and slice most of the remaining strawberries (reserve a few whole for decoration). Arrange the sliced strawberries on two of the panettone layers.
  5. Stack the cake: Stack the layers, then decorate the top with the whole and sliced strawberries. Chill in the fridge until ready to serve.
