Ingredients Needed:

  • 1 x 400g tin of rice pudding
  • 300g very ripe strawberries
  • ½ teaspoon rose water
  • 100g milk chocolate
  • 1 tablespoon of your favourite sprinkles (such as hundreds and thousands or bashed pistachios)

How To Make These Posh Lollipops:

  1. Blend the rice pudding: Tip the rice pudding into a blender and blend until super-smooth. Pour half into a bowl and divide the other half between your lolly moulds. Freeze until firm.
  2. Blend the strawberries: Rinse the blender and hull the strawberries. Blend the strawberries with the rose water until smooth.
  3. Make the second layer: Stir half of the strawberry mixture into the reserved rice pudding. Once the first layer in the moulds is firm, gently pour this mixture in, insert lollipop sticks, and freeze again.
  4. Add the final layer: When the second layer is firm, pour in the rest of the strawberry mixture and freeze the lollipops overnight.
  5. Decorate the lollipops: To serve, remove the lollipops from the freezer and gently ease them out of the moulds. Melt the milk chocolate, then dunk or drizzle the lollipops with chocolate and add your favourite sprinkles.

Recipe Tips

  • Use ripe strawberries: Ripe strawberries add more natural sweetness and flavour to the lollipops, making them taste fresher and more vibrant.
  • Freeze in layers: Allow each layer to freeze fully before adding the next to create defined layers and prevent mixing.
  • Choose fun moulds: Get creative with different shapes of lolly moulds to make your lollipops even more fun to eat.
  • Melt chocolate carefully: Melt the chocolate gently over low heat or in short bursts in the microwave to avoid burning.
  • Customize the sprinkles: Try different toppings like chopped nuts or coconut flakes for added texture and flavour.

How To Store & Reheat Leftovers

Keep any leftover lollipops in the freezer for up to 2 weeks. Store them in their moulds or in an airtight container to prevent freezer burn.
