How To Make These Cheese Scones:

  1. Prepare the dry mix: Sift the flour, baking powder, and mustard powder into a bowl. Add a pinch of cayenne pepper and sea salt.
  2. Add the butter: Cube the cold butter, then rub it into the flour mixture using your thumbs and fingers until the mixture forms cornflake-sized pieces.
  3. Add cheese and chives: Grate 100g of the Cheddar and add to the bowl, along with the chopped chives. Mix everything together.
  4. Form the dough: Make a well in the middle of the mixture, pour in the milk, and gently bring it together into a soft dough. Avoid over-mixing.
  5. Shape the scones: Turn the dough onto a floured surface, shape into a 3cm-thick round, and cut into 6 wedges. Brush the tops with milk, grate over the remaining Cheddar, and sprinkle with cayenne.
  6. Cook in the air fryer: Rub the air fryer basket with 1 tablespoon of olive oil. Place the scones in, cooking in batches if needed. Cook for 12 minutes at 180°C until golden and cooked through.
