How To Make Sesame Prawn Toasts

  1. Toast the bread: Place the bread in the air-fryer drawer and cook for 3 minutes at 200ºC/400ºF, or until one side is golden. You may need to do this in batches.
  2. Prepare the prawn mixture: Trim and finely slice the spring onions (scallions), reserving the green tops for garnish. Peel and finely chop the ginger. Chop the prawns finely, drizzle over the soy sauce, and mix well. Crack in the egg and combine thoroughly (or blitz everything in a food processor for a smoother texture).
  3. Assemble the toasts: Spread the prawn mixture evenly on the untoasted side of the bread, making sure to cover the edges. Cut each piece into four triangles and sprinkle with sesame seeds.
  4. Cook in the air fryer: Arrange the toasts in the air fryer drawer in a single layer (cook in batches if needed). Lightly spritz with olive oil and cook at 180ºC/350ºF for 12 minutes or until golden and cooked through.
