  • 1 tbsp plain flour (all-purpose)
  • ½ tsp ground cinnamon
  • 1 tbsp stem ginger (finely chopped)
  • 1 tbsp elderflower cordial or lemon juice
  • 150 g (1 cup) blackberries (optional)
  • 500 g (1 lb) puff pastry (ready-made or homemade)
  • 1 egg (beaten, for egg wash)
  • 1 tbsp demerara sugar (for sprinkling)

How To Make Apple Pie Puff Pastry

  1. Preheat oven: Set the oven to180°C (350°F).
  2. Prepare the apples: Peel, core, and slice apples. Mix with brown sugar, flour, cinnamon, ginger, and elderflower juice. Optionally, fold in blackberries.
  3. Roll out the pastry: Roll two-thirds of puff pastry into a large circle to fit your 9-inch pie dish. Press into the dish and trim excess.
  4. Fill the pie: Add the apple mixture into the pastry-lined dish.
  5. Add the top pastry: Roll out the remaining pastry, place on top, and crimp the edges. Make small slits on top for steam to escape.
  6. Brush & sprinkle: Brush with beaten egg and sprinkle with demerara sugar.
  7. Bake: Bake for 45-50 minutes until golden and crisp.
  8. Cool & serve: Let it cool slightly, and serve warm with ice cream or custard.

Recipe Tips

  • Use a mix of apples: Combining tart apples (like Granny Smith) with sweet apples (like Gala) will give your pie a perfect balance of flavor.
  • Don’t overfill the pie: Be careful not to overfill the pie with apples, as this can cause the filling to spill out while baking.
  • Chill the pastry before baking: If the puff pastry feels too soft, chill it for 15 minutes before baking for a flakier crust.
  • Brush the pastry with egg wash: This gives your pie a golden, shiny finish that looks delicious and appetizing.
  • Let the pie cool slightly: Allow the pie to cool for 10-15 minutes before cutting to prevent the filling from running out.

How To Store Leftovers?

  • Refrigerate: Let the leftover apple pie cool to room temperature. Once cooled, cover the pie and store it in the fridge for up to 3 days.
  • Freeze: You can freeze the pie after it has cooled. Wrap it tightly in plastic wrap and aluminum foil. It will last in the freezer for up to 3 months. To serve, let it thaw at room temperature for a few hours before enjoying.
