Ingredients Needed:
- 1 heaped tablespoon sumac
- 3 red onions
- 2 cucumbers
- 320g mixed-colour cherry tomatoes
- 4 pittas
How To Make Fattoush Salad:
- Make the Dressing: In a large shallow serving bowl, drizzle 5 tablespoons of extra virgin olive oil and 2 tablespoons of red wine vinegar. Season with a pinch of sea salt and black pepper, then stir in the sumac. Set the dressing aside.
- Grill the Onions: Peel the red onions and slice them into 1cm thick rounds. Place a griddle pan on high heat, and grill the onion slices until softened and nicely charred on both sides. Use tongs to transfer them directly into the dressing.
- Grill the Cucumbers: Roughly peel the cucumbers, cut them in half lengthways, and scoop out the seeds with a spoon. Then cut the cucumbers in half to fit the pan. Grill the cucumbers until they have nice char marks, then remove and roughly chop them. Add to the bowl.
- Add the Tomatoes: Quarter the cherry tomatoes and add them to the bowl with the other ingredients.
- Toast the Pittas: Slice the pittas into 1.5cm strips and toast them on the griddle until crisp and golden. Toss everything together, season to taste, and serve immediately.
