This Garlic Chicken Recipe Is From 5 Ingredients Mediterranean Cookbook by Jamie Oliver.

Ingredients Needed:

  • 4 cloves garlic
  • 2 x 150g (5 oz) skinless chicken breasts
  • ½ x 700g (24.6 oz) jar of chickpeas (juices included)
  • 250g (9 oz) baby spinach
  • 1 heaped teaspoon sumac

How To Make Garlic Chicken:

  1. Prepare the garlic: Peel the garlic cloves and slice them lengthways. Place them in a large non-stick frying pan on high heat with 1 tablespoon of olive oil, stirring regularly.
  2. Cook the chicken: Slice each chicken breast lengthways into 3 strips. Season with a pinch of sea salt and black pepper. Once the garlic is golden, remove it from the pan with a slotted spoon, leaving the flavoured oil behind. Add the chicken to the pan and cook for 5 minutes, turning regularly until the chicken is golden and cooked through.
  3. Cook the chickpeas and spinach: Remove the chicken from the pan. Add the chickpeas (with their juices) to the pan, followed by the spinach and most of the garlic. Add 1 tablespoon of red wine vinegar and toss everything over the heat until the spinach wilts and the chickpeas are hot through.
  4. Finish the dish: Season to taste with salt and pepper. Return the chicken to the pan, sprinkle with the reserved garlic, and finish with a generous dusting of sumac.

Recipe Tips

  • Use fresh garlic: Freshly peeled garlic gives the best flavor. Avoid pre-chopped garlic, as it can lack flavor.
  • Slice the chicken evenly: Cutting the chicken into even strips helps it cook evenly and quickly.
  • Don’t drain the chickpeas: The juice from the jar adds extra flavor and keeps the dish moist.
  • Wilt the spinach just right: Don’t overcook the spinach; toss it just until it wilts to keep it fresh and vibrant.
  • Finish with sumac: Adding a generous amount of sumac at the end gives the dish a bright, lemony flavor that ties everything together.

How To Store & Reheat Leftovers

Storing in the Fridge: Place the leftover garlic chicken in an airtight container. It can be stored in the fridge for up to 3 days.

Freezing: You can freeze the garlic chicken in a freezer-safe container for up to 2 months. Make sure to cool the chicken completely before freezing.

Reheating: Reheat in a pan over medium heat for about 5 minutes until the chicken is hot. Add a splash of water or chicken broth to prevent the dish from drying out.
