- ½ x 700g (24.6 oz) jar of chickpeas (juices included)
- 250g (9 oz) baby spinach
- 1 heaped teaspoon sumac
How To Make Garlic Chicken:
- Prepare the garlic: Peel the garlic cloves and slice them lengthways. Place them in a large non-stick frying pan on high heat with 1 tablespoon of olive oil, stirring regularly.
- Cook the chicken: Slice each chicken breast lengthways into 3 strips. Season with a pinch of sea salt and black pepper. Once the garlic is golden, remove it from the pan with a slotted spoon, leaving the flavoured oil behind. Add the chicken to the pan and cook for 5 minutes, turning regularly until the chicken is golden and cooked through.
- Cook the chickpeas and spinach: Remove the chicken from the pan. Add the chickpeas (with their juices) to the pan, followed by the spinach and most of the garlic. Add 1 tablespoon of red wine vinegar and toss everything over the heat until the spinach wilts and the chickpeas are hot through.
- Finish the dish: Season to taste with salt and pepper. Return the chicken to the pan, sprinkle with the reserved garlic, and finish with a generous dusting of sumac.
