- 4 brioche buns
- 6 sausages (400g total)
- 4 large jarred roasted red peppers (whole)
- 80g Manchego cheese
- 4 teaspoons black olive tapenade
How To Make Sausage Sandwich:
- Toast the brioche buns: Halve the brioche buns and quickly toast them in a large dry non-stick frying pan over medium-high heat. Set aside once golden.
- Prepare the sausage patties: Squeeze the sausages out of their skins into a bowl. Divide the sausage meat into 4 portions and, with wet hands, flatten each portion into 1cm-thick patties.
- Cook the patties: Drizzle 1 tablespoon of olive oil into the same pan, add the sausage patties, and cook for 2 minutes on each side until golden and cooked through. Remove from the pan and set aside.
- Stuff the peppers with Manchego: Drain the roasted red peppers and slice the Manchego cheese into 4 slices. Carefully stuff the peppers with the cheese slices. Cook the stuffed peppers in the pan until the cheese starts to ooze, turning occasionally.
- Assemble the sandwiches: Spread 1 teaspoon of black olive tapenade on the bottom half of each toasted bun. Place a sausage patty on top of the tapenade, followed by a Manchego-stuffed pepper, then cover with the top half of the bun.
