  2. Prepare the prawns: Peel the prawns, keeping the heads and tails on. Run a knife down the back of each prawn to remove the vein and butterfly them. Toss the prawns with olive oil, then season with salt and pepper.
  3. Season the grains: Add the cooked grains to the bowl with the courgettes. Mix in the juice of 1 lemon and half the chopped pistachios. Season to taste with salt and pepper.
