Looking for a decadent treat with just a handful of ingredients? This Jamie Oliver 5 Ingredients Tahini Rocky Road hits that perfect balance of sweet, nutty, crunchy, and chewy. Made with dark chocolate, tahini, shortbread, fruit and nuts, and a swirl of jam, it’s a no-bake wonder that comes together in minutes. I whipped this up as a weekend snack and honestly, we were all sneaking bites before it even set! (inspired by Jamie Oliver)
Ingredients Needed
- 300g dark chocolate (70%)
- 4 tablespoons tahini
- 300g luxury fruit and nut mix
- 200g shortbread biscuits
- 2 tablespoons fruit jam
How To Make Jamie Oliver 5 Ingredients Tahini Rocky Road
- Step 1: Melt the Chocolate
Set a heatproof bowl over a pan of gently simmering water. Break the chocolate into chunks, add 3 tablespoons of tahini, and stir occasionally until melted and smooth. The tahini gives it a gorgeous glossy texture and nutty undertone. - Step 2: Prep the Mix-Ins
Roughly chop half the fruit and nut mix and all of the shortbread. Combine them with the rest of the whole fruit and nuts so you’ve got a mix of textures. - Step 3: Fold Everything In
Add most of the chopped mixture into the melted chocolate and stir well to coat. Save a small handful to decorate the top—it gives a lovely crunch and looks great too. - Step 4: Swirl and Set
Pour the chocolate mixture into a baking dish lined with greaseproof paper, aiming for about 2.5cm thickness. Sprinkle the reserved toppings, then dot over the fruit jam and remaining tahini. Use the tip of a spoon to gently swirl them into the surface for a marbled effect. - Step 5: Chill and Slice
Pop the dish into the fridge for a few hours until completely set. Once firm, cut into squares or bars and serve. You’ll get that irresistible mix of rich chocolate, sweet jam, crumbly biscuit, and chewy fruit in every bite.

Why I Love This Recipe
This rocky road is so much more than your average traybake. The tahini adds a unique depth that pairs beautifully with the bittersweet chocolate, and the jam brings little pops of fruity sweetness. I love making this as a treat to share—or not! It’s one of those recipes you’ll make once and then keep coming back to.
Recipe Tips
- Gently melt the chocolate: Avoid direct heat and stir frequently to prevent scorching.
- Even chopping: Keep the fruit, nuts, and biscuit chunks uniform for a balanced texture.
- Swirl, don’t stir: Swirl in the jam and tahini for beautiful marbling without fully mixing.
- Let it set completely: Chill for at least 2–3 hours so you get clean, firm slices.
- Use quality chocolate: It’s the main flavor here, so choose one you’d happily eat on its own.
How To Store Leftovers
- In the Fridge: Store rocky road in an airtight container for up to 5 days. Keep it cold so it holds its shape.
- In the Freezer: Wrap tightly in plastic and freeze for up to 1 month. Defrost overnight in the fridge before enjoying.
