  3. Warm the ciabatta: Cut the ciabatta loaf in half lengthways and warm it in the oven alongside the chorizo.
  4. Make the tomato sauce: In a blender, blitz half of the cherry tomatoes with 1 tablespoon of red wine vinegar and 2 tablespoons of extra virgin olive oil. Season with sea salt and black pepper. Push the mixture through a coarse sieve into a bowl to remove any seeds and skins.
  5. Dress the remaining tomatoes: Quarter the rest of the cherry tomatoes and toss them with extra virgin olive oil, a pinch of salt, and a splash of red wine vinegar.
  6. Assemble the bread: Place the warmed ciabatta cut side up on a board. Spoon the tomato sauce evenly over the bread and top with the dressed tomatoes.
  7. Add the chorizo and garlic: Layer the roasted chorizo and garlic over the ciabatta. Save the excess oil from the pan for future cooking.
