How To Make Turkish-Inspired Pasta:
- Brown the Lamb: Place the minced lamb in a large non-stick frying pan on medium-low heat with 1 tablespoon of olive oil. Fry for 3 minutes until browned.
- Add Garlic and Seasoning: Peel and finely chop 3 cloves of garlic and add to the pan with 1 tablespoon of red wine vinegar, a splash of water, salt, and black pepper. Cook for 5 more minutes, stirring regularly, then mash the lamb with a potato masher to soften.
- Add Mint: Pick and finely chop most of the mint leaves, reserving some for garnish, and add them to the pan. Reduce the heat to low and let it simmer while you cook the pasta.
- Cook Pasta: Boil the pasta in salted water according to the package instructions. Once done, drain, saving a mug of starchy pasta water.
- Make the Yoghurt Sauce: Peel and finely grate the remaining garlic clove, then mix it with the yoghurt. Season with salt and pepper.
- Combine Pasta and Sauce: Add the drained pasta to the lamb pan and cook for 1 minute. Stir in the yoghurt mixture, using the reserved pasta water to loosen the sauce if necessary.
