  • 250g mixed-colour cherry tomatoes
  • 800g watermelon (¼ of a watermelon)
  • 2 x 125g balls of buffalo mozzarella

How To Make Watermelon Salad:

  1. Prep the celery: Strip off the outer celery sticks (save for later) and set aside the pale yellow inner leaves. Finely slice the remaining celery and place in a bowl.
  2. Prepare the fennel and tomatoes: Trim and finely slice the fennel, reserving any leafy tops. Halve or quarter the cherry tomatoes, then add both to the bowl with the celery.
  3. Cut the watermelon: Remove the skin from the watermelon and pick out any large seeds. Slice it into 2cm cubes and add to the bowl.
  4. Toss the salad: Mix the celery, fennel, tomatoes, and watermelon with a pinch of sea salt, black pepper, 2 tablespoons of extra virgin olive oil, and 2 tablespoons of red wine vinegar.
  5. Add mozzarella and garnish: Arrange the salad on plates or a platter. Tear the mozzarella over the top, season with extra pepper, and scatter the reserved celery leaves and fennel tops for garnish.
