Ingredients Needed
- 1 head of celery
- 1 bulb of fennel (with leafy tops, if possible)
- 250g mixed-colour cherry tomatoes
- 800g watermelon (about 1/4 of a watermelon)
- 2 x 125g balls of buffalo mozzarella
How To Make Jamie Oliver 5 Ingredients Watermelon Salad
- Prep the Celery: Strip off the outer celery sticks and save them for another use. Keep the pale yellow inner leaves aside for garnish. Thinly slice the remaining celery and add to a large bowl.
- Slice Fennel and Tomatoes: Trim and finely slice the fennel, reserving the fronds. Halve or quarter the cherry tomatoes. Add both to the bowl with the celery.
- Chop the Watermelon: Remove the rind from the watermelon and discard any large seeds. Cut into 2cm cubes and add to the bowl.
- Toss the Salad: Drizzle with 2 tablespoons of extra virgin olive oil and 2 tablespoons of red wine vinegar. Season with sea salt and black pepper. Toss everything gently to combine.
- Finish with Mozzarella: Arrange the salad on plates or a platter. Tear the mozzarella into bite-sized pieces and scatter over the top. Garnish with the reserved celery leaves and fennel tops. Add an extra grind of pepper and serve.
