How To Make This Air-Fried Aubergine:
- Prepare the Aubergine: Halve the aubergine lengthwise. Score the skin side of each half in a criss-cross pattern about ½ cm apart. Brush the flesh with olive oil and season with a pinch of sea salt and black pepper.
- Air Fry the Aubergine: Place the aubergine halves flesh-side down in your air fryer basket. Cook at 200°C (390°F) for 30 minutes, or until they are golden and slightly charred.
