Ingredients Needed:

  • 2 large free-range eggs (separated)
  • 100g caster sugar
  • 1 hot cross bun (halved)
  • 4 tablespoons sherry or elderflower cordial
  • 2 tablespoons hazelnut chocolate spread
  • 1 x 415g tin of peaches in juice (drained)
  • 2 large scoops of vanilla ice cream
  • 1 handful of unsalted hazelnuts (chopped)

How To Make Air Fryer Baked Alaska:

  1. Prepare the meringue: Separate the eggs and whisk the whites with a pinch of sea salt until stiff peaks form. Gradually add sugar while whisking until glossy.
  2. Prepare the base: Halve the hot cross bun and drizzle the sherry over the cut sides. Spread hazelnut chocolate spread on each half, then place peach slices on top.
  3. Assemble: Add one scoop of vanilla ice cream on top of one bun half. Spoon or pipe meringue over the ice cream and bun, fully covering it. Tap with a spoon to create peaks.
  4. Air fry: Transfer to the air fryer and cook at 190°C for 5 minutes or until the meringue is golden. Roast hazelnuts in a separate air fryer drawer.
  5. Finish and serve: Let the Alaska sit for 1–2 minutes to crisp up. Sprinkle chopped hazelnuts over and serve immediately. Repeat for the second Alaska.

Recipe Tips

  • Use room temperature eggs: Cold eggs are harder to whip into stiff peaks, so allow them to reach room temperature before whisking.
  • Whisk the meringue properly: Make sure your bowl and whisk are clean and dry, as even a bit of grease can prevent the meringue from forming stiff peaks.
  • Cover the ice cream completely: Ensure the meringue fully covers the ice cream, as it acts as insulation during air frying, preventing the ice cream from melting.
  • Greaseproof paper for easy transfer: Place the hot cross buns on greaseproof paper before assembling to make it easier to move into the air fryer.
