Jamie Oliver Air Fryer Salmon with Crispy Potatoes is made with new potatoes, olive oil, fresh thyme, salmon fillets, asparagus, and lemon. This easy air fryer salmon and potato recipe creates a delicious and healthy dinner that takes about 35 minutes to prepare and can serve up to 2 people.
Ingredients Needed:
- 400g new potatoes
- ½ tablespoon olive oil (for potatoes)
- 1 bunch fresh thyme (20g)
- 2 x 150g salmon fillets, skin on, scaled, pin-boned (from sustainable sources)
- 200g asparagus
- ½ tablespoon olive oil (for salmon and asparagus)
- 1 lemon
- Sea salt and black pepper, to taste
How To Make This Air Fryer Salmon With Crispy Potatoes:
- Prepare the Potatoes: Finely slice the potatoes and toss them in a large bowl with ½ tablespoon of olive oil, a pinch of sea salt, and black pepper.
- Cook the Potatoes: Place the seasoned potatoes in the air fryer in a single layer and cook at 180°C for 15 minutes. Afterward, toss in the thyme and cook for another 10 minutes until crispy.
- Season the Salmon and Asparagus: In the same bowl, drizzle the salmon fillets with ½ tablespoon of olive oil, then season with a small pinch of salt and pepper. Snap off the woody ends of the asparagus and slice each stalk into three bite-sized pieces. Toss the asparagus in the oil as well.
- Add Salmon and Asparagus to Potatoes: Once the potatoes are done, lay the salmon fillets on top of them. Slice two thin rounds of lemon and place on top of each fillet. Scatter the asparagus around the salmon.
- Cook the Salmon: Set the air fryer to 190°C and cook for 10 minutes, or until the salmon is golden and cooked through.
- Serve: Transfer the salmon fillets to serving plates using a fish slice. Divide the crispy potatoes and asparagus among the plates. Serve with a fresh green salad and a dollop of pesto for added flavor.
Recipe Tips
- Slice Potatoes Evenly: To ensure even cooking, slice the potatoes into thin, equal pieces. This helps them crisp up perfectly in the air fryer.
- Single Layer for Potatoes: Spread the potatoes in a single layer in the air fryer. Crowding them will make them soggy instead of crispy.
- Thyme for Flavor: Add the fresh thyme halfway through cooking the potatoes to keep the herb’s flavor fresh and fragrant.
- Check Salmon Cooking: Keep an eye on the salmon towards the end of cooking. Air fryers cook quickly, and you want the salmon to be tender but not overcooked.
- Lemon Rounds on Salmon: Placing lemon slices on top of the salmon adds a bright citrus flavor while cooking and keeps the fillets moist.
How To Store & Reheat Leftovers
Storing in the Fridge: Place the leftover salmon and potatoes in an airtight container. Store in the fridge for up to 2 days.
Reheating: Reheat in the air fryer at 180°C for 5-7 minutes or until heated through.
