Ingredients Needed

  • 150g / ¾ cup golden caster sugar
  • 1 lemon (zest)
  • 50g / 3½ tbsp unsalted butter (cold)
  • 100g / ¾ cup plain flour

How To Make Autumn Apple Crumble

  1. Preheat the oven: Set to 200°C / 400°F / Gas 6.
  2. Prepare the apples: Peel, core, and chop into 3cm / 1-inch chunks.
  3. Cook the apples: In a saucepan over medium heat, combine apples, 100g / ½ cup sugar, and lemon zest. Cover and cook for 5 minutes until softened. Remove from heat and let cool slightly.
  4. Make the crumble topping: In a bowl, rub the butter into the flour until it resembles breadcrumbs. Mix in the remaining sugar for extra texture.
  5. Assemble: Transfer the apples to a 25cm x 30cm / 10 x 12-inch baking dish and sprinkle the crumble evenly on top.
  6. Bake: Cook for 25–30 minutes until golden and bubbling.

Recipe Tips

  • Use the right apples: A mix of Bramley and firm eating apples gives the best balance of sweetness and tartness. Bramley apples soften into a compote, while eating apples hold their shape.
  • Chill the butter: Cold butter makes the crumble topping light and crisp. If it’s too soft, the topping will be dense instead of crumbly.
  • Don’t overcook the apples: Simmer them just until slightly soft. Overcooking will make them too mushy, and they’ll break down completely in the oven.
  • Get the topping texture right: Rub the flour and butter together just until you get a breadcrumb-like texture. If overworked, the crumble will become doughy instead of crisp.
  • Bake until golden and bubbling: The crumble should be golden brown, and the fruit should be bubbling at the edges. This ensures the apples are perfectly cooked and the topping is crunchy.

How To Store Leftovers?

  • Refrigerate: Let the leftover apple crumble cool to room temperature. Then, transfer it to an airtight container and store it in the fridge for up to 3 days.
  • Freeze: Once cooled, wrap the crumble tightly in plastic wrap or store it in a freezer-safe container. Freeze for up to 3 months. Thaw overnight in the fridge before serving.
