  • 1 tbsp plain flour (all-purpose flour)
  • 1 x 340g (12 oz) jar of baby cornichons, with half of the juice
  • 160g (5.6 oz) frozen peas
  • 2 sprigs fresh mint

How To Make Jamie Oliver Posh Fish & Chips

  1. Cook the Chips: Preheat the air fryer to 200ºC (400ºF). Toss the potato wedges with olive oil, salt, and black pepper. Arrange in a single layer in the air fryer and cook for 30 minutes, shaking halfway through.
  2. Prepare the Coating: Beat the egg with paprika, salt, and pepper in a shallow bowl. In a food processor, blend Parmesan, bread, and a splash of olive oil to fine crumbs. Spread onto a plate.
  3. Coat the Salmon: Dust salmon with flour, dip into the egg, and then press into the breadcrumbs. Place in the air fryer and cook for 10 minutes at 200ºC until golden.
  4. Make Gherkin Ketchup: Blitz cornichons and half their juice in a food processor until smooth. Set aside what you need and refrigerate the rest.
  5. Prepare the Minty Peas: Boil peas for 4 minutes, drain, and reserve a bit of water. Blend peas with mint and a little cooking water until smooth. Season to taste.
