Ingredients Needed

  • 500g (about 1 lb) Maris Piper potatoes
  • 50g (1/2 cup) Parmesan cheese, plus extra for grating
  • 1 clove of garlic
  • 2 tbsp duck fat or butter
  • 1 tbsp plain flour
  • Olive oil, for greasing
  • 10-12 sage leaves
  • 1 pack Beef Rib Bourguignon (pre-made)
  • Fresh horseradish, to serve

How To Make Jamie Oliver Potato, Parmesan & Sage Röstis with Beef Bourguignon

  • Prep the Potatoes: Scrub and coarsely grate the potatoes into a clean cloth. Finely grate in the Parmesan and garlic. Season with salt and pepper. Squeeze out all the excess moisture.
  • Mix the Rösti: Place the grated mix in a bowl and stir in duck fat or butter, and flour until combined.
  • Cook in Waffle Iron: Preheat waffle iron and grease with olive oil. Spoon in mix and top with sage leaves. Close and cook for 10 mins, until golden and crisp.
  • Heat the Bourguignon: Prepare the Beef Bourguignon as per packet instructions.
  • Assemble: Cut rösti into 8 pieces. Top with Beef Bourguignon, fresh horseradish, and extra Parmesan.
