How To Make Jamie Oliver Sausage And Squash Chilli

Prep the Sausages:

Start by squeezing the meat out of the sausage skins and rolling into small meatballs. If using veggie sausages, just slice them. Add them to a deep casserole pan with olive oil, cinnamon, and a pinch of pepper. Fry on medium-high heat for 5 minutes, stirring regularly until browned. Add rosemary leaves, Cajun seasoning, and smoked paprika. Stir for one minute to coat everything in that fragrant spice.

Cook the Vegetables:

Toss in the frozen chopped onion, carrot, and celery mix with a pinch of salt and pepper. Let everything soften and take on some color—about 10 minutes.

Add Squash and Garlic:

Peel and chop the butternut squash into 1.5 cm chunks, and finely chop the garlic. Stir both into the pan with the balsamic vinegar and cook for a minute.

Beans and Tomatoes:

Pour in the tins of beans, including their juices, followed by the plum tomatoes. Break up the tomatoes with a spoon, then fill each can halfway with water, swirl, and pour that in too.

Simmer and Bake:

Preheat the oven to 180°C/350°F/gas 4. Bring the chilli to a boil, then cover with a lid and bake for 1 hour and 30 minutes, removing the lid for the last 30 minutes. Add splashes of water if it gets too thick.

Final Touch:

After baking, gently mash about a third of the beans to thicken the sauce. Stir everything together, season to taste, and finish with balsamic vinegar or olive oil if you like. Top with fresh coriander and serve hot.

Recipe Tips

  • Use quality sausages: Whether meat or veggie, good sausages elevate this dish.
  • Uniform squash pieces: Keep chunks the same size for even cooking.
  • Don’t skip the mash: Mashing some beans adds great texture.
  • Swap the veg: If you’ve got fresh onions, carrots, and celery, use those!
