- 5–10 Brussels sprouts, trimmed
- 2–3 tbsp free-range mayonnaise

For the Cranberry Sauce:
- 500g (1 lb 2 oz) fresh or frozen cranberries
- 400ml (1 2/3 cups) fresh orange juice
- 250g (1 1/4 cups) sugar
- ½ tsp ground cinnamon
- ½ tsp ground cloves
- 1 fresh bay leaf
How To Make Turkey Burger
- Make the cranberry sauce: Put all the sauce ingredients into a heavy-bottomed saucepan over medium-high heat and bring to a boil. Lower the heat and simmer for about 30 minutes, until the cranberries break down and the liquid thickens. Transfer to a clean container and let cool for 1 hour.
- Prepare the turkey patties: Season the minced turkey, then shape it into patties slightly larger than the buns. Use a 3cm (1-inch) cutter to create a hole in the center of each patty. Fill the hole with sausage meat, pressing any excess turkey around the edges to seal.
- Make the Brussels sprouts slaw: Cut the Brussels sprouts in half and finely shred them. Mix in a bowl with enough mayonnaise to bind, season to taste, and set aside.
- Cook the burgers: Preheat the oven to 180ºC (350ºF/Gas 4). Brush a griddle pan with vegetable oil and heat over medium heat. Cook the patties for 4–5 minutes on each side, until the juices run clear. Transfer to the oven for 5 minutes to finish cooking.
