Ingredients Needed

  • 450g (1 lb) coarsely minced free-range turkey thighs
  • 100g (3.5 oz) Cumberland sausage meat
  • 5–10 Brussels sprouts, trimmed
  • 2–3 tbsp free-range mayonnaise
  • Vegetable oil, for cooking
  • 4 hamburger buns

For the Cranberry Sauce:

  • 500g (1 lb 2 oz) fresh or frozen cranberries
  • 400ml (1 2/3 cups) fresh orange juice
  • 250g (1 1/4 cups) sugar
  • ½ tsp ground cinnamon
  • ½ tsp ground cloves
  • 1 fresh bay leaf

How To Make Turkey Burger

  1. Make the cranberry sauce: Put all the sauce ingredients into a heavy-bottomed saucepan over medium-high heat and bring to a boil. Lower the heat and simmer for about 30 minutes, until the cranberries break down and the liquid thickens. Transfer to a clean container and let cool for 1 hour.
  2. Prepare the turkey patties: Season the minced turkey, then shape it into patties slightly larger than the buns. Use a 3cm (1-inch) cutter to create a hole in the center of each patty. Fill the hole with sausage meat, pressing any excess turkey around the edges to seal.
  3. Make the Brussels sprouts slaw: Cut the Brussels sprouts in half and finely shred them. Mix in a bowl with enough mayonnaise to bind, season to taste, and set aside.
  4. Cook the burgers: Preheat the oven to 180ºC (350ºF/Gas 4). Brush a griddle pan with vegetable oil and heat over medium heat. Cook the patties for 4–5 minutes on each side, until the juices run clear. Transfer to the oven for 5 minutes to finish cooking.
  5. Toast the buns: Cut the buns in half and warm them under the grill (broiler) for a few minutes until lightly toasted.
  6. Assemble the burgers: Spread a little mayonnaise on the bottom half of each bun. Place a turkey burger on top, spoon over some cranberry sauce, and finish with the Brussels sprouts slaw. Place the top bun on and enjoy!
