  • 2 teaspoons ground cumin
  • 1 teaspoon fresh rosemary finely chopped
  • ¼ teaspoon ground cloves

  • 1 tablespoon red wine vinegar
  • 375 ml dry red wine
  • 400 g tinned cherry tomatoes broken up slightly (see my notes)
  • 375 ml beef stock
  • 1 teaspoon fine salt

  1. Heat 2 tbsp olive oil in a large pot. Fry 1 sliced brown onion and 12 baby onions until they soften, then set aside.
  2. Fry 1.5kg lamb shoulder pieces in batches until browned, then set aside with the onions.
  3. Add 4 crushed garlic cloves and fry for 30 seconds. Mix in 2 tbsp tomato paste, 2 tsp ground cumin, 1 tsp finely chopped fresh rosemary, ¼ tsp ground cloves, and a pinch of cinnamon. Fry for 1 more minute.
