How To Make Peach Granita:

  1. Freeze the peaches: If using fresh peaches, peel, stone, and slice them. If using tinned peaches, drain them. Lay the peach slices flat inside a reusable bag and freeze them overnight.
  2. Blend the granita: When ready to serve, break the frozen peaches into a food processor. Add a couple of mint leaves and the vanilla bean paste, then blend until the mixture forms a granita-like texture.
  3. Prepare the yoghurt: Divide the Greek yoghurt between six chilled serving bowls.
