How To Make Peach Granita:
- Freeze the peaches: If using fresh peaches, peel, stone, and slice them. If using tinned peaches, drain them. Lay the peach slices flat inside a reusable bag and freeze them overnight.
- Blend the granita: When ready to serve, break the frozen peaches into a food processor. Add a couple of mint leaves and the vanilla bean paste, then blend until the mixture forms a granita-like texture.
- Prepare the yoghurt: Divide the Greek yoghurt between six chilled serving bowls.
- Serve the granita: Spoon the peach granita over the yoghurt. Garnish with the remaining mint leaves and drizzle with a little extra vanilla bean paste.
